Salame Felino PGI Cav. Boschi recognized among the excellences of Guida Salumi 2019

We are pleased to announce that this year our Salame Felino PGI has been selected among the Italian excellences that will be present in the Guide to Salumi d'Italia 2019 of L'Espresso, with a maximum rating of 5 pins!

 

The guide is the result of an extensive evaluation process among hundreds of products from all the Italian regions, organized by a panel of chefs, professional sommeliers, expert “norcini” and culinary critics.

 

The result of these analyzes consists in marks expressed with the symbol of the traditional horse bone ""pin"": from two pins for ""good quality salami"" to five for ""excellence"". The pin symbol derives from the norcina tradition, which still uses the horse bone needle for its particularity to absorb the aromas of the product and to quickly rehearse them, allowing the experts to evaluate, through the olfactory characteristics of the product, the good progress of the maturing process.

 

The Guide is officially on newsstands and in bookshops from 22 November and represents a journey through the ancient Italian culture cold cuts, a heritage of high quality and variety, recognized all over the world.

Yesterday we had the honor of participating in the presentation of the 2019 edition that took place at ALMA, the International School of Italian Cuisine.
