Today, 1 every 100 Italians suffers from celiac disease, the form of permanent intolerance to gluten, a protein substance found in many foods (from wheat to cereals such as barley, spelled, oats, rye and malt).
However, many other products contain gluten or are at risk of contamination. Between these also meat, especially cured meats and sausages.

 

Why do many cured meats contain gluten and lactose?
The use of gluten and powdered milk is often linked to the need to amalgamate the meat and accelerate its maturing in cases where it contains excess water.

 

All Cavalier Umberto Boschi products are gluten-free and lactose-free, as indicated on the label.
The attention we put in choosing the raw material, in addition to processing and maturing according to the artisanal method, allow us to obtain naturally good products.

 

It should also be noted that Salame Felino PGI, Coppa di Parma PGI, bocconcini di Salame, Strolghino and Cotechino cotto are also included in the AIC 2018 handbook, which certifies and guarantees periodic checks on raw materials and on each stage of production in the compliance with the specifications of the Italian Celiac Association.
